MÁXIMUM GOLD & SILVER
Selection for our Máximum Gold collection — the finest expression of our hams — begins in the Dehesa, where, during the Montanera (acorn-finishing season), we identify the animals with the greatest potential for exceptional curing and abundant, even marbling.The same philosophy guides our Máximum Silver selection, choosing animals whose free-range rearing, equivalent to the traditional Recebo system, offers the finest conformation and outstanding flavour potential.
SELECTION & PATIENCE
These animals reach above-average weights and produce meat exceptionally rich in delicate natural marbling.
Their hams therefore require an exceptionally long natural curing process, lasting up to 60 months, under continuous supervision in our natural curing cellars.
MÁXIMUM ENJOYMENT
The result is immediately recognisable in its deep ruby-red colour, fine muscle fibres and abundant pearly-white marbling. Its flavour and aromas are equally remarkable: elegant, balanced and rich in subtle nuances that only life in the open Dehesa can provide.
