Marcial’s story began in the early twentieth century, when our ancestors first became involved in the world of Ibérico in a rural environment shaped by hard work and determination. At that time, Guijuelo was not a particularly productive area for farming or livestock, yet it became the starting point of an activity that would eventually define an entire family.
The first years were devoted to trading raw materials, mainly pork fat in exchange for hams, at a time when pork fat was a highly valued source of energy and in great demand. What began as local trade soon expanded across the Sierra de Salamanca, later reaching the La Vera region, the provinces of León and Zamora and, eventually, southern Galicia.
Over the decades, with the arrival of the railway, the business evolved. Ibérico pigs began travelling from the Dehesas (Spanish oak pastures) of Extremadura and Andalusia to Guijuelo, where they were processed and cured, firmly establishing the family’s specialisation in Ibérico products.
At the beginning of the 1980s, the Marcial Castro brand was born with a clear objective: to achieve the highest quality by carefully controlling every stage of the process, from raising the animals to the final production of every product.
Today, Marcial reflects the spirit of an entrepreneurial family that has successfully adapted to changing times without losing its essence. Under the leadership of Manuel and Javier Castro, together with the strategic vision of Clotilde Sánchez, the company continues to strengthen its position as a leading name in the world of Ibérico, carrying its legacy forward to new markets and future generations.
