At Marcial we have created the “Maximum” category to describe a selection of excellent hams and shoulders, from Iberian pigs which have been given more privileged treatment.

We are talking about the finest examples of the breed, set apart so that they can roam in the richest and most productive oak woods in the pasture. With more hectares available to them to trot around freely and feast on the prized acorns, with no skimping on quality or quantity.

These pigs, which are closely “pampered” by our overseer, reach a greater weight than the average and produce a meat with a generous amount of delicious fat marbling.

This is the high point of the Iberian pig, a gastronomic landmark which we can appreciate after the long and painstaking curing process to which Marcial’s “Maximum” hams and shoulders are subjected.
